Jambalaya

Ingredients:

  • 1 Cup Chicken, Cooked/Chopped
  • 1 Cup Andouille Sausage or Smoked Sausage or Ham, Chopped
  • 1 8 oz. can Tomato Sauce
  • 3 Cups Water (or use chicken broth)
  • 1 Cup Uncooked long grain rice
  • 1 Tablespoon Instant Minced Onion - or 1/2 fresh onion
    chopped
  • 1 Tablespoon Green Pepper Flakes or 1 bell pepper
    chopped
  • 1 Tablespoon Parsley Flakes
  • 1 Whole Bay leaf
  • 2 Teaspoons beef bouillon granules
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon Dried Thyme
  • 1/4 Teaspoon Dried Crushed Red Pepper

Cook and de-bone chicken (or used canned chicken). Combine all ingredients and bring to a boil in a heavy pot or dutch oven, or slow cooker.

Cover, reduce heat and simmer 20 to 25 minutes or until rice is tender. Remove and discard bay leaf.
