Whole Egg
1 Cup Sugar
2/3 Cup Canned Pumpkin
1 Teaspoon Soda
1 Teaspoon Cinnamon
3/4 Cup Flour
1 1/2 Cups Powdered Sugar
1/4 Stick Butter or margarine
1 8oz. Package Cream Cheese
1 Teaspoon Vanilla
Beat
eggs slightly. Add sugar, pumpkin, soda, cinnamon, flour. Mix till
blended. Grease cookie sheet and place waxed paper on it. Grease
waxed paper. Spread with cake batter.
Bake
at 350 for 15 minutes. While cake is baking, lay a kitchen towel
on the counter and sprinkle with part of the powdered sugar. When
cake is done, turn onto towel, remove waxed paper, sprinkle with
powdered sugar and roll up (with towel) into a roll to cool.
While
cake is cooling, mix butter, cream cheese, vanilla and 1 cup powdered
sugar. Mix till smooth.
When
cake is cool, unroll, spread cream cheese mixture onto cake and
roll back up. Roll in waxed paper and refrigerate. When ready to
serve, slice into 1" slices.
